Our Easter weekend was full of fun and family while we went Jeepin in Moab! We had a great time there and were lucky that Justin's parents had two jeeps! Justin and Brandon rode in the TJ AKA "The Flame Jeep" while us girls and Justin's Mom and Dad rode in the Rubicon (we figured we would be safer with them anyway:)... Torrance was such a trooper. She went everywhere with us and was in her car seat for almost the whole trip. The most exciting part of our whole trip was Sunday. That was the day we were going home...but not until ONE LAST RIDE. For this ride we decided to go on the trail:METAL MASHER. Well lets just say we made it about half way and then had a few rough rocks to conquer. As Justin tried to drive the jeep up a steep rock mutilple times with out making it he decided "one more time". As he went up we heard a pop. He back down and yes he broke the axle. Long story short..it was on a mountain top for 1 1/2 days while he and his dad found an axle and all the tools needed to fix it! While the rest of us drove home in the dodge so we could make it back to work the following days. Oh and one last thing... the other jeep did not make it unharmed. As we all piled in it to finish the trail it blew a seal and was leaking from the back end. YA...always one last ride but as they all said it aint fun til something gets broke:)
Justin and I are high school sweethearts. We dated for about six years before we got engaged. We have now been married for 1 1/2 years and just had our first little baby girl(Torrance). We couldn't be happier. We live in St. George Utah and love the perfect weather here. I work for a Dermatologist and enjoy all the new and crazy things we see from day to day. Justin works in sales but also does landscaping on the side. We have a fun, calm dog named gizmo who has been with us for almost two years. He was the baby but not anymore, and is adjusting to the new less exciting role of a big brother(I know kind of goofy but he is part of the family). Well that's us in a nutshell!
From now on when I try a really good recipe I am going to put it on here and also try to include a picture. I will start posting soon! ................................................................................................................. 2-4-09** Shepherd's Pie Ingredients: 1 can french style green beans(un- drained), 1 can tomato soup, 1 lb ground beef, mashed potatoes and cheese
Brown beef in skillet. Add green beans and tomato soup and let simmer for 5 min. Add mashed potatoes-enough to cover entire skillet. Cover with cheese and put in oven until bubbly. Yum Yum-you can always add your own touch as well...like onions in the beef. --------------------------------------------------------------- ALL AMERICAN MEAT LOAF Ingredients: Crock pot, 1 1/2 lbs ground beef, 2 cups bread crumbs, 1 c ketchup, 1/2 c onion, 2 eggs(beaten), 1 tsp salt, 1 tsp black pepper, cheese and 2 tbs tomato paste
In a large mixing bowl, combine all the ingredients, except for the cheese and tomato paste. Shape half of the meat mixture into a loaf. Arrange preferred amount of cheese, then top with the remaining meat mixture, pressing edges together to seal. Place in the crock-pot. Top with the tomato paste and more cheese(love cheese :). Cover; cook on low for 4-6 hours or high for 3-4 hours.
